Going multi-monitor you definitely won't go back!
I have a Toshiba laptop that is roughly 4 or five years old and I use it with multi-monitor setups.
I have two multi-monitor setups, in one room I have a three monitor setup, in another room I have a 2 monitor setup
and the Toshiba laptop happily swaps between them as required.
For the three monitor setup I run 24 inch LG's, for the two monitor setup I have 27 inch Benq's. None of the monitors are top of the range they are just average to cheap price monitors and they seem to do the job fine for what I do (no gaming).
One thing to consider, especially for a three monitor setup is what size stand/bracket you are going to mount the monitors on. When I sourced mine I found that anything over 24 inch was either hard to find or expensive (I got mine from a local office superstore in Australia called Officeworks).
Now for actually getting the laptop to display on the monitors, most laptops have a HDMI port so that takes care of one monitor. Now for the other two monitors I just bought a USB video card that plugs into a USB port. It's basically just a little box with a lead that plugs into the USB port of the laptop and the box has two monitor outlets. The one I bought was called a display link beyond HD (there will be heaps of different brands, quick Google search) and it had 2 outlet ports, one HDMI and one DVI. Just make sure your monitors has the corresponding inputs.
Once you get it all set up just install the drivers for the USB video card. Then once you plug your monitors in go to Control Panel – display – change display settings (Windows 7) and it will bring up your three monitors. You will need to fiddle around a bit to get it how you want it but basically you're looking to extend the desktop to the multiple displays.
As I said at the start you won't go back! I can happily unplug my laptop from my workstation in one room (with it running) and take it to the other workstation in another room. Just make sure before you disconnect it from one workstation bring all the windows back to the main centre monitor otherwise you may lose/hide a window or two...
